Posole/pozole is a Mexican and New Mexico (and Colorado?) dish.
Basically it's hominy soup, with a very savory broth (often
lots of pork and/or oregano and/or garlic).
It's like menudo minus the ¡TRIPA!

As with most Latin North American dishes, the recipe varies
incredibly from state to state, with at most one ingredient,
and the name, being the only constants.
