substituteA couple of slices of brisket pressure-cooked in beer & onions with black pepper; a can of white hominy with chipotle-infused olive oil; one perfect white peach.
The white peaches are very good this year. Locals be advised, do not get them at the Ralphs; they're hard like rocks and preseeded with flies and expensive. Go to Trader Joes.
