I know how you feel about simplicity in cooking. My first cooking adventures were invariably simple, like chilis and spaghettis and such, but then at a certain point I started to get fancier. The problem is that I'm not a "fiddly" cook, I like to get my arms into dough or make a big soup. One complicated dish at a time I can deal with, but I'd try to do a whole meal in that vein. O_o Bonehead!
I think I've learned to accept my own nature more as a cook, as well as work within the cycles that happen all over. I used to pick recipes regardless of season and what was around. Making 6 hour soups in the hottest parts of summer, paying through the nose for raspberries in February. Trying to cook a huge meal when I hadn't the energy to call for pizza. Not doing that so much anymore. =)
As you say though, without having done the dumbest of things I've tried, I don't think I'd know how to do some of the best things I do now. And I still make the best chili ever.
