My bartending instructor told us tales of cockroach infestation. He worked at one of the "nicer" restaurants in Edmonton for many years, and was present for the Rain O' Roaches (yes, nicer in Edmonton means 2 forks, 2 spoons, and no Li'l Shaver menu). Everyone in the white hazmat outfits, the gas starts up, and they fell out of the rafters like brown rain. They had to do this procedure *three times*. Crazy roach vacuums for cleanup, a little polish and voila, ready to start over with the 2k surviving roaches.

I admit I had eaten there a couple times in my life and never seen a roach. At least they were polite vermin.
